Tortellini with Broccoli and Avocado

Try this quick and easy pasta dish with a crunch from the broccoli and nuts and creaminess from the avocado and Castello® Marinated Fetta Cubes.

ingredients

  • 150 g Castello® Marinated Fetta Cubes with Garlic and Herbs
  • 500 g tortellini pasta, with spinach & ricotta
  • 2 avocados
  • 250 g broccoli
  • 50 g roasted hazelnuts

preparation

1. Cook the tortellini according to the package instructions.

2. Cut the broccoli into florets, and boil for 2-3 minutes.

3. Peel, pit and dice the avocado. Strain about 2 tablespoons of oil from the Castello® Marinated Fetta Cubes with Garlic and Herbs jar.

4. Mix pasta, vegetables and fetta cubes with the oil. Sprinkle with nuts, then serve.

Serving: Serve the dish warm with fresh pepper and bread.
