
Blue Cheese burger with red onion relish
Our recipe for the ultimate blue cheese burger with red onion relish pairs fresh vegetables with a side of rich blue cheese and honey mustard dressing that lingers on your palate. Stealing the show, caramelised red onion relish offers added bite and savour to finish.
ingredients
Burger buns (10 pcs.)- 300 ml water
- 50 ml oil
- 1 large egg
- 1 egg for brushing
- 15 g yeast
- 1 tsp salt
- 1 tbsp sugar
- 150 g durum wheat flour
- 400 g wheat flour
- 60 g butter
- sesame seed to sprinkle on top
- 5 - 6 red onions
- 25 g butter
- 2 tbsp brown sugar
- 2 - 3 sprigs of thyme (or a half tsp of dried thyme)
- 100 ml red wine (can be omitted)
- 100 ml balsamic vinegar or sherry vinegar
- salt
- pepper
- tbsp mayonnaise
- 4 tbsp honey
- 1 - 2 tbsp coarse ground mustard
- lemon juice (to taste)
- salt

- 750 g beef mince
- 1 pack Castello® Blue cheese slices
- 1 large beef tomato

PreparationBurger buns (10 pcs.)
Mix the egg, water, oil, sugar and yeast together until the yeast dissolves. Mix the two types of flour with the salt. Add 2/3 of the flour mix to the liquid mixture and stir together. Continue adding the last part of the flour mixture until you can touch the dough without it sticking to your fingers. Knead the dough for about 5 minutes, then a small cube of cold butter. Knead until it is incorporated into the dough.
Let the dough rise under a cloth for one hour. Place the dough on a board sprinkled with flour. Divide the dough into 10 equal portions. Roll it out to the buns and place them on a baking sheet. Let them rise for another half hour. Brush with egg and sprinkle with sesame.
Bake the buns at 200 degrees for about 12-15 minutes. They must have a bit of color and sound hollow when you knock them on the bottom.
Red onion relish
Cut the onions into thin strips and fry them at low to medium heat in butter until lightly caramelized. It will take approximately 10-15 minutes. Add thyme, brown sugar, red wine and vinegar. Let cook until the liquid has boiled down. Season with salt and pepper.
Honey mustard dressing
Stir together the mayonnaise, honey and mustard. Season with lemon juice, salt and pepper to taste.
Additional ingredients (for 6 burgers)
Form 6 equal patties of meat. Season them with salt and pepper. Put them on a scorching grill for 3-4 minutes on each side - however, the needed time depends slightly on the heat of the grill. If it can not be quite so warm, you might need to leave them on for a few extra minutes. After flipping the burgers, you can add the Castello Blue Cheese Slices on the grilled side. When you are done grilling the meat, you can use the grill to warm up the burger buns.
Split the buns and spread dressing on both cut sides. Add a leaf of lettuce and a slice of tomato. Top with the meat and relish. Close the burger. Enjoy!
