Cheddar and orange marmalade with sherry and almonds

Ingredients

3 organic oranges
100 ml sherry
200 ml water
200 g sugar
100 g almonds
1 cinnamon rod

Preparation

Preparation

Cut the oranges in thin slices and add them in a pot together with cinnamon, sherry and water. Boil for about half an hour and add sugar and almonds. Let it simmer for another half hour, put it on glasses (over held with hot water) and close immediately. Serve the cooled marmalade with Castello Tickler Mature Cheddar and crackers.
