    Following a traditional recipe from 1952, the creation of Castello® Aged Havarti begins in Denmark, where fresh cows' milk meets time-honoured techniques and a high level of dedication and craftsmanship. Its slow and deliberate beginning paves the way for the cheese to enter the ripening room, where the magic truly happens.

    12 months' maturation is the key to this cheese's elevated texture and flavour. Once it has reached its peak, its characteristic protein crystals form a delicate crunch, the creamy texture evolves, and the flavour intensifies: caramel sweetness followed by subtle notes of caramelised onion. Here, the final stage is reached, where each cheese is individually inspected to ensure high quality in every memorable mouthful.
