Ingredients
Preparation
Melt butter, syrup, and brown sugar in a saucepan over medium heat.
Mix cinnamon, ground cloves, ground ginger, and ground allspice with flour, almonds, and pistachio kernels.
Stir potash with water. Mix the melted butter with the potash and flour mixture. Knead it all together into a homogeneous dough, avoiding kneading for too long. Form the dough into a rectangular log of about 5 cm and wrap it in cling film. Place the dough in the fridge for about 3 hours.
Preheat the oven to 180°C.
Thinly slice the chilled dough and arrange the pieces on a baking tray lined with baking paper. Bake for about 10–12 minutes, then cool on a wire rack.
Cut the Castello® Creamy Blue into small triangles and place one on each of the cookies. Top with slices of fresh fig and finish with a light drizzle of acacia honey.

Ideas and Inspiration
Delicious gingerbread cookies with blue cheese and figs
Treat yourself to gingerbread cookies with blue cheese and figs, where deep spices, creamy cheese, and sweet figs meet in a wonderfully layered mouthful. A slice of Castello® Creamy Blue adds a silky, buttery topping with a subtle tang to the cookies, and beside this creamy layer is a jam-like sweetness and a pleasant crunch from the delicate seeded texture of the figs. Finished with a drizzle of acacia honey for a light, floral sweetness with a faint hint of vanilla, this sumptuous take on a classic winter treat is ideal for enjoying all year round.
Perfectly tender in the middle and crisp on the edges
Golden and slender, the gingerbread cookies emerge from the oven with edges that bake up crisp and snappy, yet inside they stay fine-crumbed and tender, with a soft, even bite. Butter and syrup work together to create a smooth and slightly sweet dough that holds its shape beautifully in the oven. Although they appear delicate at first glance, they are firm enough to carry the rich blue cheese and fig topping without crumbling.
Warmly spiced with cinnamon, cloves, ginger, and allspice
These classic spices create the unmistakable aroma and flavour that define gingerbread. The scent of warm spices begins to drift through the kitchen as the cookies bake, instantly setting a familiar, comforting mood. This comfort continues in the taste – cinnamon and cloves offer an intensely aromatic flavour that is both sweet and slightly spicy, while ginger cuts through with a peppery bite and subtle citrus notes. Allspice ties the blend together with hints of cinnamon, cloves, nutmeg, and black pepper.
Nutty crunch from almonds and pistachios
Almonds and pistachios introduce a lovely nutty crunch to the gingerbread cookies. Scattered throughout the dough, they break up the fine crumb with small, textured bites. While the almonds offer a light and gentle sweetness, the pistachios provide a deeper buttery sensation that enhances the overall richness of the spiced gingerbread cookie dough.
Bring on the festive cheer with these sweet and savoury canapés
Gingerbread cookies with blue cheese and figs bring a true sense of celebration to any occasion, as the interplay between sweet and savoury creates a delicious element of surprise. They feel perfectly at home during the festive season, whether that’s Christmas and New Year's or birthdays and elegant evening receptions. With their striking look, they bring instant appeal to any table, and their small size makes them effortless to grab and serve as one-bite canapés.
Simply display them on a platter at the centre of your table surrounded by complementary bites like aged cheeses, spiced nuts, stuffed dates, kale crisps, and small savoury tarts. Or place them alongside smoked salmon blinis, a snack platter with roasted grapes, brie, and crackers, or baked creamy white cheese for a varied and inviting table.
Savour the experience with creative variations
Elevate these gingerbread cookies with blue cheese and figs by adding your own creative touches.
In the dough, either replace the existing nuts or add more varieties, such as walnuts for their slightly bitter undertone or hazelnuts for a warmer, toastier profile.
The fruit topping offers just as much flexibility. Dates have a sticky texture and a caramel-like sweetness, while pear or apple slices bring a juicy, crisp bite. For a more concentrated fruit layer, use a spoonful of fig compote instead of fresh figs.
On top, place thinly sliced prosciutto or another cured ham to introduce a mild, savoury saltiness – crisp pancetta crumbs offer a similar salty note but with a firm crunch. Complete the cookies with fresh thyme leaves, which contribute a subtle woody scent that complements the cheese and fruit.
The shape of the cookie can shift the impression just as much as the toppings. If you prefer square, bite-sized pieces, shape the dough into a firm square log before chilling. For round cookies, roll the dough into a smooth cylinder before refrigerating, then slice it thinly.
