Baked Double Cream Brie with Rosemary

Baked Double Cream Brie with Rosemary

Enchantingly aromatic, our recipe for Baked Double Cream Brie with Rosemary displays simple ingredients bursting in flavour. Aromatic hints of garlic and rosemary provide nuances, which the creamy center of the cheese absorbs. Can be enjoyed as a starter or dessert.

1 serving
Fruity Sour

  • 2 sprigs of rosemary
  • 1 Castello® Double Cream Brie (300g round; or 2 x 150g)
  • 1 - 2 garlic cloves, thinly sliced

Optional accompaniments

  • rosemary biscotti biscuits
  • coarse mustard
  • grapes

1. Line a small ovenproof dish with parchment paper. Place the round Castello® Double Cream Brie into the baking dish. If you are using 150g half moons, then put the two halves as close together as possible, with the cut sides of the cheese against one another.

2. With a sharp knife make small incisions in the top of the cheese and fill them with little sprigs of rosemary and thin slices of garlic.

3. Bake the cheese for 15 minutes at 180°C. Serve immediately with biscuits, mustard and fresh grapes.

Tips & tricks

Stuffing herbs in the cheese while it cooks gives the cheese a delicious flavor. For a variation on this recipe, you can try different herbs, or even thin slices of truffle.
