Preheat the oven to 175C/350F/gas mark 4.
Place the slices of Parma ham on a baking tray lined with baking paper, bake in the oven for 5 minutes or until crisp. Allow to cool on pieces of paper towel.
Toast the rye bread and cut into squares, place slices of Castello Tickler Mature Cheddar cheese on top, then a teaspoon of green tapenade/pesto, break up the Parma ham and place on top.
Present on a serving platter or a wooden board. Or alternatively, serve individually so your guests can enjoy making them themselves: serve the Castello Tickler Mature Cheddar on a wooden board, next to the cheese serve the green tapenade and the crisp Parma ham in small serving platters.
