Balance out strong flavours with this delightful Blueberry Syrup which adds a sweet, fruity contrast to cheeseboards. Revel in its smooth consistency and mild zesty flavours. It's also perfect as a topping on ice cream, or other desserts.
Ingredients
- 4 sprigs lemon thyme
- 200 g blueberries
- 3 cups water
- 100 g sugar
Preparation
Preparation1. Boil water, lemon thyme and blueberries for 10 minutes at medium heat without lid. Remove the blueberries from the liquid.
2. Stir the sugar into the remaining liquid. Boil until the syrup has thickened considerably and you have big bubbles.
3. Stir the fruit back into the syrup, and place in a glass jar to serve alongside Castello Matured Cheddar.

Sensory hack tip
You can make this syrup with most berries, so feel free to swap out the blueberries with what you have available.
