Matured Cheddar with avocado, dukkah, focaccia and sivri pepper

A unique gathering of flavour and texture – our recipe for cheddar with avocado, dukkah, focaccia and sivri pepper blends soft nuances from smooth avocado and sharp Cheddar alongside gentle heat curtesy of pickled Turkish peppers and dukkah. Calmed though not tamed, the result is tingling with a soothing finish.

ingredients

  • slice of focaccia
  • 1 pack of Castello® Castello® Mature Cheddar
  • 2 ripe avocados
  • 4 tbsp dukkah
  • 80 g green olives
  • 12 slices of prosciutto
  • 4 tbsp haydari – a Turkish dip
  • lemons wedges

preparation

1. Remove the cheese from the fridge half an hour before serving.

2. Break the cheese into suitable portions.

3. Slice the avocados and arrange the slices on the bread.

4. Place the bread on four plates and sprinkle with dukkah.

5. Distribute the sivri peppers, olives, haydari and slices of prosciutto on the plates.

6. Serve with lemon wedges.
