Slightly crumbly from maturation, sharp cheddar finds balance in homemade marmalade from fresh oranges, cinnamon and sherry, in turn offering a heap of exciting contrasts to enjoy.
ingredients
- 1 Castello® Mature cheddar
- 3 organic oranges
- 100 ml sherry
- 200 ml water
- 200 g sugar
- 100 g almonds
- 1 cinnamon rod
preparation
Preparation1. Cut the oranges in thin slices and add them in a pot together with cinnamon, sherry and water and boil for about half an hour.
2. Add sugar and almonds and let it simmer for another half hour.
3. Put it on glasses (over held with hot water) and close immediately.
4. Serve the cooled marmalade with cheddar and crackers.
