1. Heat 2 tbsp. olive oil in a large saucepan. Add the popcorn, cover and shake the pan for about 3-5 min or until the popcorn is popped.
2. Remove the pan from the heat and add the remaining oil and paprika, chili, lemon zest, salt and pepper.
3. Put the lid on and shake the pan thoroughly until everything is mixed together.
4. Sprinkle the popcorn with grated Castello Matured Cheddar and serve while they are warm.
