Gluten Free Mac and Cheese

  • 300 g gluten free penne pasta
  • 1 dl cream
  • 5 dl milk
  • 2 tbsp. corn starch
  • 300 g Castello® Mature Cheddar
  • 1 tsp. pepper
  • 15 g nut meg
  • 75 g baby spinach
Gluten Free Mac and Cheese


Cook the gluten free penne pasta according to the packet instructions in a large pan of boiling salted water until al dente. In a saucepan bring milk and cream to a boil and. Turn down the heat to medium. Mix grated Castello® Mature Cheddar with corn starch. Gradually add to the saucepan with milk and cream. Continue to stir until the cheese has melted and you get a nice smooth sauce. Season with nutmeg, salt and pepper. Add the baby spinach and stir.


Drain the gluten free pasta and add to the cheese sauce, stirring until the pasta is covered in cheese sauce. Continue to stir for an additional 3-4 minutes and serve.
