Ingredients

10 sprigs fresh parsley
3 sprigs mint
2 sprigs oregano
100 ml olive oil
50 ml pale vinegar, preferably sherry vinegar
1 garlic clove, peeled
½ red chillies
2 pinches salt
1 shallot

Blend all ingredients in an electric hand blender

Serve with crunchy bread, or also goes excellently on a salad or pizza

Serving Suggestion

Use the herb sprigs in their entirety as there is just as much flavour in the stalks as in the leaves.
