Ingredients

Puff pastry brie bites Avocado toast
  • 4 slices of sourdough bread
  • 2 avocados
  • 4 eggs
  • 1 tbsp butter
  • 1 handful of fresh basil
  • ½ tsp black pepper, freshly ground
  • ½ tsp sea salt
To serve
  • 150 g strawberries
  • 2 grapefruits

Preparation

Puff pastry brie bites

1. Preheat the oven to 200°C.

2. Roll out the puff pastry dough, cut it into squares, and gently press the small squares into a muffin tin.

3. Bake in the oven for approximately 15 minutes until crispy and golden brown. Let them cool on a wire rack.

4. Fill each puff pastry cup with slices of Extra Creamy Brie and the warm fruit compote.

5. Garnish with walnuts.

Avocado toast

1. Toast the sourdough bread until crispy and warm.

2. Slice the avocado into thin pieces.

3. Fry eggs in a hot pan with butter.

4. Arrange the sourdough bread with butter, avocado, eggs, and fresh basil.

5. Season with salt and pepper.

To serve

1. Cut grapefruits in half.

2. Arrange puff pastry bites, avocado toast, strawberries, and grapefruit halves on a serving platter.

Tips

Ensure the puff pastry dough is well-chilled before starting. Roll it out on a lightly floured surface to prevent sticking, and handle it minimally to maintain its flakiness. Use a sharp knife or pastry cutter for clean edges. For the best results, chill the prepared dough squares in the muffin tin for 10-15 minutes before baking. This helps the pastry stay crisp and puff up in the oven.

Tips

Play around with the consistency of the brie. Instead of letting them cool, add the brie to the puff pastry bites when they are fresh from the oven. This way, the cheese will soften and become extra creamy.

A delicious combination for social times and brunch

Whether you are hosting a brunch or simply making something delicious for a weekend morning, share this flavourful moment and upgrade your brunch to impress family and friends.

Add a personal touch

Transform the texture of your brie by making baked brie bites. After baking the puff pastry, add slices of brie and return them to the oven just until the cheese melts. This will give you irresistible, melty pieces of brie that make the perfect pairing for the crispy pastry.

Experiment with some topping variations, too, exploring different nuts and fruits. Enhance your puff pastry bites with caramelised apricot slices, or try other nuts than walnuts, such as almonds or pecans. Experience the unforgettable sensation of other sweet condiments for a fresh twist on top. Try fig jam, spiced apple chutney, cranberry sauce, apricot jam, or blackberry jam for a different flavour profile.

Incorporate something savoury to balance the sweetness. Adding fresh herbs, such as rosemary, thyme, basil, or mint, to your puff pastry bites provides a sophisticated, aromatic touch. Sprinkle chopped rosemary or thyme for earthy flavours, basil for a delicate, peppery lift, and mint for a refreshing contrast.
