Ingredients

  • 4 slices of sourdough bread
  • 1 tbsp butter
  • 8 slices of serrano ham
  • 1 Castello® Extra Creamy Brie Cheese
  • 2 fresh apricots, in slices
  • A small handful of fresh thyme
  • ½ tsp sea salt
  • ½ tsp black pepper, freshly ground

Preparation

1. If desired, toast the sourdough bread.

2. Spread butter on the bread slices.

3. Layer with serrano ham, Extra Creamy Brie, and apricot.

4. Garnish with thyme, salt, and pepper.

Tips

Play around with the thickness of the brie slices. Cut them so they match how significant a role you want them to play in the sandwich. Opt for ½ cm thick slices to give the sandwich a delicate taste of brie and a subtle creaminess. Or cut them into thick slices or wedges to let them take centre stage. They will taste delicious in the sandwich no matter how you cut them.

Tips

Choose the best apricots. Look for ones with a rich orange colour and a slight red blush. They should be firm yet tender to the touch and emit a sweet, fragrant aroma. Select apricots with smooth, unblemished skin and a slight wrinkle around the stem. Heavier apricots usually indicate juiciness and better flavour.

Questions about brie sandwich

  • What goes well with brie in a sandwich?

A brie sandwich is delicious with various ingredients that complement the creamy texture and mild flavour. In this recipe, we pair it with salty serrano ham, fresh apricots, and aromatic thyme layered on toasted sourdough bread.

  • How to cut brie for a sandwich?

Chill the brie in the fridge for 15-20 minutes to make it firmer and easier to slice. Cut it into thin slices to let it subtly complement the other sandwich ingredients, or cut it into small wedges for a substantial bite, perfect when the cheese is the standout ingredient. You can also cut it into small chunks to give it a rustic feel, great for pairing with robust ingredients, such as roasted vegetables or cured meats. Keep the rind on for added flavour, or remove it for a smoother texture.

  • How to use brie cheese in sandwich?

Use brie in both warm and cold sandwiches. For cold sandwiches, use brie cut straight from the fridge so you can easily make nice, even slices. Let it sit while you prepare the other sandwich ingredients, allowing it to come closer to room temperature, which deepens its flavours. Brie can be used in various ways in warm sandwiches: grill it in a panini or slightly caramelise it by briefly melting it with a kitchen torch. This technique adds a subtle, rich flavour to the cheese, enhancing the overall flavour of your sandwich.
