Seamed with fresh herbs and not much else, flavours are allowed to develop on their own, resulting in a subtle profile that is guaranteed to cater to a wide range of dishes.

250 g cherry tomatoes
2 tbsp fresh thyme, chopped
100 ml olive oil
2 tsp sugar
