Ingredients
Roasted grapes- 1 bunch of red grape
- 1 tbsp olive oil
- 1 small handful of fresh sage
- ½ tsp sea salt
- 1 Castello® Extra Creamy Brie Cheese
- 8 pieces of crackers
- 100 ml honey caramelised nuts
Preparation
Roasted grapes1. Preheat the oven to 200°C.
2. Place grapes on a baking sheet with parchment paper.
3. Drizzle with olive oil and season with salt and fresh sage.
4. Bake in the oven for about 20 minutes.
To serve1. Serve Castello® Extra Creamy Brie with crackers, warm oven-baked grapes, and caramelised nuts.
TipsWhen roasting the grapes, ensure they are spread out evenly on the baking sheet. Make sure not to overcrowd them. This allows for even caramelisation and prevents steaming, resulting in a richer, more concentrated flavour.
TipsArrange your platter with an eye for colour and texture contrast. Place the brie in the centre, surrounded by bunches of grapes, nuts, and neatly stacked crackers. This not only makes it more visually appealing but also easier for you or your guests to pick their preferred flavour combinations.

Oven-roasted grapes with olive oil, sea salt, and fresh sage
Transform ordinary grapes into a culinary sensation by roasting them in the oven. Drizzled with olive oil and sprinkled with sea salt and fresh sage, the grapes bake to a sweet and slightly caramelised treat. As they roast, their natural sugars concentrate, resulting in a rich, caramelised sweetness with a hint of tartness. The heat softens the grapes, giving them a tender, juicy interior encased in a slightly crisp skin. Enjoy this delicious new way of eating grapes, indulging in their rich depth of flavour that pairs beautifully with the other elements of your platter.
Served with soft brie, crunchy crackers, and caramelised nuts
Experience the luxurious creaminess of Castello® Extra Creamy Brie, perfectly balanced by the crunch of your favourite crackers. They provide the perfect vehicle to enjoy these luscious pairings, bringing everything together in a harmonious blend of flavour and texture. To add a touch of sophistication, include a serving of honey caramelised nuts. These nuts offer a nice crunch and a sweet, buttery flavour with a hint of warmth. The combination of soft, creamy, and crunchy textures and sweet and savoury flavours ensures every bite is a moment of pure pleasure.

Add your personal favourites
Consider baking the brie instead of serving it cold or at room temperature. Simply place the brie in an oven-safe dish, drizzle with honey, and sprinkle with a few fresh thyme leaves. Bake at 180°C for 10-15 minutes until the cheese is soft and gooey. This warm, melted, baked brie is utterly irresistible, adding a new layer of indulgence to your snack platter.
Try something new and personalise your snack platter by adding your favourite ingredients. Experiment with sweet, fresh fruits or berries, such as sliced pears, figs, strawberries, and raspberries, or dried fruits, such as apricots and dates. Add crunch and flavour with nuts and seeds, for example, almonds, walnuts, pistachios, pumpkin seeds, and sunflower seeds. Spiced or flavoured nuts can bring a pleasant twist and complement the honey caramelised nuts.
You can also elevate the platter with dips and spreads. Try honey mustard for a tangy-sweet element, fig or apricot jam for added sweetness, or hummus and olive tapenade for a savoury contrast. Both sweet and savoury dips and spreads are delicious on top of a cracker with brie. Add elegance with fresh herbs, such as rosemary, thyme, or basil. Edible flowers can also provide a visually appealing and unexpected touch. For a sweet finish, include dark chocolate squares or delicate pastries and biscotti on the platter, offering a rich contrast to the creamy brie and the sweet, roasted grapes.
