          Making full use of the freshness of its ingredients – our recipe for Strawberry salad with melon, lemon and mint handsomely imitates spring-weather on a plate. Sporting diversity in both colour and flavour, bright zests from fresh fruit find contrasts in mild yoghurt that acts as a perfect counterbalance to taste and texture.
Ingredients
- ½ dl chopped, fresh fresh mint leaves
 - 2 tbsp freshly squeezed lemon juice
 - 2 tbsp cane sugar
 - 325 g watermelons in cubes (approx. 1½ x 1½ cm)
 - 300 g honeydew melons in cubes (approx. 1½ x 1½ cm)
 - 400 g rinsed strawberries halved
 
- 2 dl greek yoghurt
 
- fresh fresh mint leaves
 
Preparation
Preparation1. Combine mint leaves, lemon juice and cane sugar and stir into the fruit just before serving.
2. Arrange the fruit in a serving dish along with the yoghurt, and garnish with fresh mint leaves.
3. Serve immediately.

Add sugar to the yoghurt if desired.
