Salad with Castello Danish Blue, chorizo and cauliflower

  • 4 fresh chorizo
  • mixed lettuce (romaine lettuce and red Mizuna)
  • 1 small cauliflower
  • 1 Castello® Danablu
  • 50 g caper berries
  • 40 g roasted pine nuts
  • fresh fresh basil
  • 1 lemon
  • 3 tbsp olive oil
  • salt
  • pepper



1. Fry the chorizo on a hot pan and cut into slices.

2. Place lettuce on a serving dish.

3. Add sliced chorizo, cauliflower and Castello Danablu.

4. Finish the dish with caper berries, pine nuts and basil.

5. Just before serving the salad, season with salt, pepper and a drizzle of lemon juice and olive oil.
