Classic French Galette with Blue Cheese

French Galettes are a family classic for Manon and a traditional meal that her and her family have every Friday! This recipe taken from Manon’s home region of Brittany is simple and quick to make, made all the better with Castello Danish Blue.

Ingredients:

For the Galette Batter:

  • 330g of buckwheat flour
  • 750ml of water
  • 10g of salt
  • 1 egg

For the filling:

  • 1 egg
  • 50g of Castello Danish Blue
  • 1 tbsp of crème fraîche
  • 2 slices of Parma ham
  • 1 tbsp of butter

Method:

1. Make the galette batter: In a large bowl, mix the flour and the salt, then add the water and the egg. You’ll get a nice silky batter. Cover and leave to rest in the fridge for at least 2h, or overnight.

2. Cook the galette: add 1 tsp of butter to a frying pan under a medium heat. Pour 1/2 of a ladle of batter and make a circle with your hand for the batter to spread thinly around the pan. Cook for 2 min and use a spatula to turn it around.

3. Add the filling: crack the egg on top of the galette. Spread half of the Danish Blue and the crème fraîche. Cook for 2 minutes. Close the galette using a spatula and place on a plate. Add the Parma ham and sprinkle the rest of the Danish blue on top. Serve with fresh salad. Bon appétit!
