  • 1 granny smith apple (or similar green, sour apple)
  • 1 small fennel
  • 1 lemon
  • 2 cups water
  • 125 g sugar

preparation

Preparation

Remove the base of the fennel and the core of the apple and cut into relatively fine slices. In a pot mix water, lemon juice and peel. Boil until tender (about 15 minutes) and then add the sugar and boil for another 15 minutes. Add a little extra water if it’s about to boil dry. Put the confiture on glass and enjoy with your favorite cheese.

To boost fennel flavor, you can add a teaspoon of fennel seeds at the start. You can also spice up the taste further by replacing the white sugar with muscovado sugar.
