
BBQ chicken wings with Extra Creamy Danish Blue

The dish is finished with an intense depth from a crumbling of blue cheese.

- 750 g chicken wings
- 300 ml barbeque sauce
- 100 g Castello® Extra creamy danish blue
- 200 g tomato ketchup
- 2 tbsp brown sugar
- 50 ml espresso coffee
- 2 tbsp apple apple cider vinegar
- 2 tsp tabasco sauce
- 1½ tsp smoked paprika
- 1 tsp chipotle pepper powder
- 1 tsp chipotle powder
- ground ground coriander
- ½ tsp ground ground cumin
- salt
- pepper
preparation
PreparationMix all the ingredients for the BBQ sauce in a small pan and bring to the boil. Let it simmer for 5-8 minutes. Blend the ingredients in a food processor until nice and creamy. Season with tabasco and chipotle to make the sauce as spicy as you like.
Place chicken wings in a re-sealable plastic bag with 1.5 dl BBQ Sauce and leave them to marinate overnight. Barbecue the marinated chicken wings at high heat for about 2-3 minutes on each side. Add the rest of the BBQ sauce and barbecue the wings over indirect low to medium heat with the lid closed for 15-20 minutes. The chicken wings are done when the meat is falling off the bones. Place the BBQ chicken wings on a large plate and add crumbled Castello Extra Creamy Danish Blue on top.
