Bresaola wrapped grissini with Cheddar and basil sauce

Our recipe for Bresaola wrapped grissini with cheddar and basil sauce strikes the perfect balance between simple preparation and flavourful ingredients. Draped in dried prosciutto, crispy breadsticks join a sauce of aromatic anchovies, fresh basil, garlic and sherry vinegar beneath shavings of cheddar.

  • 10 grissini sticks or bread sticks
  • 20 slices bresaola
  • fresh basil
  • 100 g olive oil
  • 2 anchovies
  • 2 garlic cloves
  • 1 tbsp sherry vinegar
  • 75 g Castello® Tickler Extra Mature Cheddar


Wrap two slices of bresaola around each grissini, and place the wrapped grissini in a plate or bowl. Blend basil, olive oil, anchovies, garlic and sherry vinegar. Season with salt and pepper. Pour the sauce in the plate next to the wrapped grissini. Grate Castello Tickler Extra Matured Cheddar on the wrapped grissini and serve.
