Treat guests to a sparkling surprise - our recipe for Bellini with creamy white & marinated peaches pairs a homemade cocktail with a side of soft white cheese and fresh fruit. Finding complementing contrasts in the smooth character of the cheese, a puree of sweet peaches add colour and zest to a dash of sparkling prosecco.

  • 210 ml prosecco
  • 6 tbsp. or 90 ml peaches puree
  • 2 - 4 raspberries optional

Extra Creamy Brie & marinated peaches

  • Castello® Extra Creamy Brie
  • 2 sun ripe peaches
  • ¼ thinly sliced red onion
  • 20 mint leaves
  • 1 tbsp olive oil
  • pinch sea salt
  • 1 tsp of chilli flakes optional


Pour the peach puree into 2 champagne glasses and carefully top with Prosecco.

Finally add Raspberries.

Free Peaches from stone and slice and toss with rest of the ingredients.

Serve the Castello Extra Creamy Brie with marinated Peaches and Bellinis.
