Cheddar pancakes

These pancakes are hard to follow – our recipe for Savoury Pancakes with Cheddar is the main act at any get-together or dinner party. Garnished with rich Cheddar, flavours are smooth leaning towards creamy with nuances of caramelised butter to follow. A mellow clash of contrasts, this is the perfect comfort-food.

Cheesy Salty


  • 175 g flour
  • 4 eggs
  • 200 g grated Castello® Tickler Mature Cheddar
  • 1 pack of Castello® Traditional Danish Blue
  • 100 ml milk
  • salt
  • pepper
  • 2 tbsp finely chopped chives
  • butter for frying


Whip eggs and milk with salt and pepper. Mix in the flour and whip until there are no more lumps. Add the grated cheddar and chives.

Fry in a hot pan for about 2 minutes on each side.

Top the cheese pancakes with Parma ham, lettuce, tomatoes, Castello Traditional Danish Blue and watercress.
