Spiced Clementine Confiture
Ingredients
4 portions
6 clementines
2 tbsp fresh ginger, grated
5 dl water
1 cinnamon stick
5 cardamom pods
2 cloves
300 g sugar
lemons
Preparation
Cut the clementine in small pieces, make sure the peel is finely divided.
Add to a pan with grated ginger, water and spices.
Boil the mixture on medium heat for 45 minutes until the clementine peel is almost see-through.
Add sugar and simmer for another 45 minutes.
Add lemon juice to taste. Pack the preserves into 2 sterilised jars and store in the fridge.
Serve with Pineapple Cheese and crackers.
