80 g pickled beetroot
50 g cleaned frisée lettuce salad
2 tbsp olive oil
1 tbsp apple vinegar

Place the cheese on a platter with gherkins, pickled beetroot and duck rilettes. Turn the salad with oil, vinegar, salt and pepper. Arrange the salad on the dish.
