Egg muffins with mature cheddar

A beautiful way to start the day – our recipe for Egg muffins with cheddar can make any breakfast or brunch table look stunning. The eggs and cheese will give the muffins a lovely texture and a rich taste, whiles the onions, lettuce and cress will give your dish a crispy bite. A good morning indeed.
Ingredients

100 g plain fresh cheese 25%
60 ml whipped cream 38%
4 eggs
1 tsp coarse salt
8 slices smoked turkey breasts
1 smoked turkey breast red onion
75 g lettuce mix
2 tbsp cress
2 tsp rapeseed oil
freshly ground pepper
Preparation
Egg muffins
Lightly whip the cream cheese with the cream, then beat in the eggs. Grate and add Castello Tickler Extra Mature cheese and salt. Bake the 8 muffins in the middle of the oven for 20-25 min. at 200°C (conventional oven), then leave to cool in the tins. Carefully remove them from the muffin tins.
Combine the red onions and lettuce in a bowl. Add the cress, then gently toss with oil and pepper. Serve with the warm muffins.
